Jeotgal (Korece: 젓갈) veya jeot (Korece: 젓 ), ( çevirisi tuzlu deniz ürünleri), karides, istiridye, deniz tarağı, balık ve havyar gibi deniz ürünleriyle yapılan, korunmuş tuzlu yemekler kategorisidir.[1][2][3] Jeotgal içeriğine bağlı olarak yumuşak, katı parçalardan berrak, et suyu benzeri sıvıya kadar değişebilir.
Katı jeotgal genellikle banchan (yan yemekler) olarak yenir. Aekjeot (Korece: 액젓) veya balık sosu olarak adlandırılan sıvı jeotgal, kimçi'nin baharatlanmasında, çeşitli çorba ve güveçlerde (guk, jijimi, jjigae) popüler olarak kullanılır.[4] Bir çeşni olarak, saeu-jeot (karides jeotgal) gibi daha küçük katı parçalara sahip jeotgal ise genellikle domuz eti yemekleri (bossam, jokbal, samgyeopsal), sundae (Kore sosisi), hoe (çiğ balık) ve birkaç çorba ve güveç ile daldırma sosu olarak servis edilir.

Üç Kore Krallığı'nda fermente gıdalar yaygın olarak bulunabiliyordu, 289'da yayınlanan bir Jin Hanedanlığı tarihi metni olan Üç Krallığın Kayıtları gibi, Wei Kitabı'nın Dongyi başlıklı bölümünde Koguryo Korelilerinin şarap, soya fasulyesi ezmesi, tuzlanmış ve fermente edilmiş balık gibi fermente gıdalar yapma konusunda yetenekli olduklarından bahseder.[5] Jeotgal'in ilk Kore kaydı, Samguk Sagi'de, Kral Sinmun'un 683'te düğün hediyesi olarak pirinç, şarap, jerky ve jeotgal sunduğuna atıfta bulunarak ortaya çıkmıştır. 1124'te, bir Çinli Song Hanedanlığı elçisi, jeotgal'ın Koryo'da beğenildiğini yazdı. Joseon edebiyatında yazılan 16. yüzyıl günlüğü olan Miam ilgi'de yirmi dört jeotgal türü yer almaktadır.[6] 180'den fazla jeotgal türü, Gosa chwaryo ve Swaemirok 16. yüzyıl kitaplarında; Eumsik dimibang, Sallim gyeongje ve Jeungbo sallim gyeongje 17-18. yüzyıl kitaplarında bulunabilir.[7][8][9]

Jeotgal türleri, ana malzemelere, bölgelere, aile tercihlerine ve kişisel tercihlere bağlı olarak değişir. Geçmiş zamanlarda ulaşımın sınırlı olması nedeniyle, denizlere yakın bölgeler, iç bölgelere kıyasla daha fazla jeot türüne sahiptir.
