At the beginning of the summer, we planted three basil plants. It was the first time we had window boxes, and the plants produced far more basil than we expected. Now that fall is upon us, I gave the plants a major trim and made some pesto to freeze for the winter. I like my pesto pretty garlicy, and used for the following ratios for each batch:
2 cups basil
1/4 cup pine nuts
1/3 cup olive oil
2 cloves garlic
1 tablespoon lemon zest
I decided not to add cheese because I was afraid it wouldn't freeze very well, so I plan to add Parmesan when I'm ready to use the pesto this winter.
